Ingredients & Directions:
- 1/3 cup Mighty Cricket Vanilla Protein Powder
- 1/2 cup sugar
- 1 2/3 cups self-rising flour
- 1 tbsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 cup dried apples, chopped
- 1 egg
- 1/3 cup milk
- 1/2 stick (1/4 cup) butter, melted
- Preheat oven to 350°F (175°C). Line or grease a muffin tin.
- In a large bowl, mix dry ingredients: flour, protein powder, sugar, cinnamon, and nutmeg.
- Stir in chopped dried apples.
- In a separate bowl, whisk together the egg, milk, and melted butter.
- Combine wet and dry ingredients just until mixed—do not overmix.
- Spoon batter into muffin cups, filling each about 3/4 full.
- Bake for 18–22 minutes, or until a toothpick comes out clean.
- Cool for 5 minutes in the pan, then transfer to a wire rack.
