Apple Cinnamon Muffins

Ingredients & Directions:

  • 1/3 cup Mighty Cricket Vanilla Protein Powder
  • 1/2 cup sugar
  • 1 2/3 cups self-rising flour
  • 1 tbsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 cup dried apples, chopped
  • 1 egg
  • 1/3 cup milk
  • 1/2 stick (1/4 cup) butter, melted
  1. Preheat oven to 350°F (175°C). Line or grease a muffin tin.
  2. In a large bowl, mix dry ingredients: flour, protein powder, sugar, cinnamon, and nutmeg.
  3. Stir in chopped dried apples.
  4. In a separate bowl, whisk together the egg, milk, and melted butter.
  5. Combine wet and dry ingredients just until mixed—do not overmix.
  6. Spoon batter into muffin cups, filling each about 3/4 full.
  7. Bake for 18–22 minutes, or until a toothpick comes out clean.
  8. Cool for 5 minutes in the pan, then transfer to a wire rack.
