Ingredients
- 1/3 cup sugar
- 2 Tbs dried lavender
- 1 1/4 cup all-purpose flour
- 1/2 cup Mighty Cricket Vanilla Protein Powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 egg
- 1 cup milk
- Juice from 1 small lemon (~3 Tbs)
- Grated lemon peel from 1 small lemon (~2 tsp)
- 6 Tbs unsalted butter, melted
Instructions
- Preheat oven to 375°F.
- Grease bottoms of 12 muffins cups or line with baking cups.
- Place sugar and lavender in food processor or grinder; pulse 30 to 60 seconds.
- Sift through strainer into medium bowl to remove any large pieces of lavender.
- Whisk in flour, protein powder, baking powder, baking soda and salt until well-blended.
- In small bowl, lightly beat an egg. Whisk in milk, lemon juice and lemon peel, and melted butter.
- Pour egg mixture into flour mixture and stir until just blended.
- Divide evenly among muffin cups. Bake 10-12 minutes or until browned and center is set. Cool on wire rack.
