Lavender Lemon Muffin

Ingredients

  • 1/3 cup sugar
  • 2 Tbs dried lavender
  • 1 1/4 cup all-purpose flour
  • 1/2 cup Mighty Cricket Vanilla Protein Powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 egg
  • 1 cup milk
  • Juice from 1 small lemon (~3 Tbs)
  • Grated lemon peel from 1 small lemon (~2 tsp)
  • 6 Tbs unsalted butter, melted

Instructions

  1. Preheat oven to 375°F.
  2. Grease bottoms of 12 muffins cups or line with baking cups.
  3. Place sugar and lavender in food processor or grinder; pulse 30 to 60 seconds.
  4. Sift through strainer into medium bowl to remove any large pieces of lavender.
  5. Whisk in flour, protein powder, baking powder, baking soda and salt until well-blended.
  6. In small bowl, lightly beat an egg. Whisk in milk, lemon juice and lemon peel, and melted butter.
  7. Pour egg mixture into flour mixture and stir until just blended.
  8. Divide evenly among muffin cups. Bake 10-12 minutes or until browned and center is set. Cool on wire rack.
